Chopstix: Beijing in Albuquerque

In December, 2008 Jackie was in Albuquerque filming his latest movie The Spy Next Door. Chan plays a man who is asked to baby-sit for his neighbor’s children and winds up having to protect them from secret agents after one of them accidentally downloads a code. After trying several places in the city, Chan settled on Chopstix as his favorite, finding it the most authentic Chinese restaurant in the city. Even going into the kitchen to try his hand at cooking and generally charming the owner and staff.
How could I resist trying Chopstix? Jackie Chan loved the Fresh & Salty Pork so of course that’s what I ordered, and we also selected Ma Po Tofu with Ground Pork. We added egg rolls to round out our meal.

Ah, said the young woman taking our order upon hearing my choice, you want the Jackie Chan dinner. Yes, I did.

The dish is basically fresh and salted (partly fat) pork stewed with bamboo and Chinese seasonings until it is fall off the bone tender. The Ma Po Tofu tofu stir-fried with ground pork and special Szechwan seasonings

We tucked into our meal and it was delicious. She checked back frequently to make sure we were enjoying the food, particularly the Jackie Chan dish.

It turns out that few nonAsians order the Jackie Chan dish. Apparently his high regard for the restaurant does bring in new customers, but few actually try the dish he loved. The owner was quite concerned that I wouldn’t enjoy it, or even send it back unhappy with my choice. It is indeed a very traditional Chinese dish, made by the owner who was born and raised in Bejing.

The other dish, chosen to be a “safe” Americanized dish turned out to be another traditional Chinese dish (although I have no idea if Chan tried it or not), with tofu meltingly infused with the flavorful sauce of black beans, chile, and ginger.

The restaurant caters to both lovers of traditional Chinese cuisine, and the more Americanized dishes. The owner cooks the traditional dishes and a New Mexican cook does the other entrees like sweet and sour chicken, and pepper steak.

Ah, but it is the traditional straight-from-China dishes that make this eatery shine. Americanized Chinese cuisine is available anywhere, and everywhere. Some of these entrees are on the regular menu, but most are considered specials and printed on sheets of paper lining one of the walls of the sparely decorated but comfortable room.

We said goodbye to the owner and staff, promising to return, and we have. And we will continue to return. It is the best place in the city for real Chinese cuisine.
